Preserve Eggplants / Pickled Aubergine Italian Recipe
Preserve Eggplants / Pickled Aubergine Italian Recipe
Eggplant, Aubergine, Baigan or Brinjal, whatever you call it, autumn is the season it is coming in from the garden, in abundance and this recipe is worth adding to your homesteading preserving folder.
Preserving some of your Aubergine harvest by pickling the eggplant and covering it in a great quality, light, or in my case extra virgin, olive oil, is a wonderfully delicious addition to the antipasto board.
Pickled Aubergine Italian Recipe
Eggplants 1666g / 3.673 lbs
1/3 cup course sea salt
1 cup white wine vinegar
1 cup light (high quality) olive oil
3 garlic cloves (optional)
1 dried chilli (optional)
2 tbsp dried herbs of choice (optional)
Day 1
Harvest or source fresh, firm, glossy eggplants, wash, dry and remove ends and peel
Slice aubergines into match sticks
Place in plastic or glass bowl and mix well with salt
Weigh down with plate and weights, leave for 24 hours to draw out bitter brine
Day 2
Drain eggplant and weigh down over colander to sit for a few hours draining
Day 2 - A few hours later
Place eggplant back into bowl, add white wine vinegar, garlic chilli and dried herbs, mix well
Squeeze liquid out, one handful at a time
Break up the eggplant and pack into a sterilized jar
cover with the oil, make sure it settles and there is at least 8mm of oil covering the eggplant at all times
Place lid on and store on refrigerator for one month, to let the flavours fully develop before consuming, however if it is your first jar of the season, try to wait at least 3 days.
This easily stores for a few months and when consuming a jar, always use a clean utensil and make sure eggplant stays covered with oil.
If you use a good quality olive oil, make sure you enjoy that soaked up in a crusty loaf as well.

Welcome to Moat Cottage Homesteading, I'm Elissa and here at Moat Cottage, we raise and grow and process some of our own free range meat, organic vegetables and fruit. We grow all of our herbs for both eating and medicinal purposes as well as hunt, fish and forage.
Our goal each season is to preserve our produce for the year ahead by canning, dehydrating, fermenting and freezing and we work on being prepared for emergency situations.
Avoiding single use plastic, chemicals and artificial fragrances is important to us and we are trying to live an older style life, balanced with this modern world.

    Boiling your jars means that wiping all the threads with a tea towel is a superfluous step ..just let the bath clean all that and sterilise it.

    I raise rabbits for meat and have had a hard time getting things done just right with the instapot - it is really easy to under or overcook them in my experience. I decided to slow cook mine in my instapot after watching this, but I did so fully submerged (I did about half rabbit broth and half water). It took 4-6 hours before it started to get tender enough to be interesting, and by that point it was too late for dinner, so I put it on for another 14 hours and had it for lunch the next day. Two things I noticed: #1 - fully tender, no worries there. #2 - everything was falling apart, and just getting it out I had to use a smooth with holes and in the end a strainer because it wasn't just falling off the bone tender, the bones were disconnecting from each other tender. I deboned and shredded it way faster than what I normally have to go through #3 - I missed a few small vertebrae as I was going through the meat which one of my daughters was not happy about and had a hard time eating the rest once she found a bone. 20 hours was too long, I'll try a straight 6 next time and see how it is #4 We got way more from it then we did cooking it and taking it out where we had to debone it ourselves - I didn't weight it, I usually have a hefty carcass for bone broth later - instead I have a small handful of bones and nothing else. Way better efficiency-wise and water was a broth that was ready for two soups we made the same day. The first meal was a white chicken (rabbit) chili.

    Hi, we have a duck nest on our 3rd floor balcony.. im worried about how the babies are going to get down, is she gunna fly them down one by one?? or at a certain point after they hatch should i bring the nest down to the 1st floor?? its in a planter , we live in a south FL community with ducks all around

    Thanks for sharing. I have Cuckoo Marans chicks coming next week, unfortunately it doesn't look like my broody hens are in the mood anymore. So we will see, I have a brooder box set up to give them their first drink and feed. And then I'll just go from there. It's been a while since I've had chicks, and never Marans so it was nice to familiarize myself to the growth rate

      If it’s only been waterbath canned and in good condition, then you can reuse. If lid has been pressure canned then Don’t reuse. I don’t reuse my lids as it’s not worth the risk of an unsealed lid in the future.

    looks great, but I think the seeds really need to be crushed or ground up slightly in order for our body to get any nutrition out of them. usually our body is not able to break down the whole seeds and they just pass straight through without our system getting any nutrients from them. also, peanuts would be a great addition to these bars.

    Detached snails and slugs I go around the garden at night with a flashlight and their little Trails illuminate when the flashlight hits it so you can kind of tell the areas where there must active and then just look and it works all the time but I'm glad to know about this beer thing I'm going to try it immediately

      Yes, I do this in my whole garden too, on the rare evenings / nights when we have rain. The nocturnal snails and slugs come out of their hiding spots and are easy to find for duck treats, the next day. The beer traps are like baby sitters in my food garden 🐌 🌱

    I don't recommend using your hand to catch burning embers, bit dangerous! Use a shell or a small pot, be safe! Thanks for the video though, it is great that you have shared and I'm grateful 💜

    Lemme get the straight, they lay eggs, do the sit on it or they just leave it unattended?

      When they have eventually laid enough eggs, then they start sitting. Prior to this, they leave the eggs in the nest each day.
